Sweet potatoes with brinjal topping


4 large sweet potatoes, washed


2 brinjals, thickly sliced

30 ml olive oil

250 ml hummus (see tips)

chilli flakes


Preheat oven to 180 ÂșC. Place sweet potatoes on a baking sheet. Bake for 20 minutes, or until soft when pricked with a fork. Set aside to cool slightly, then halve lengthways. TOPPING: Place brinjals on a baking sheet and drizzle with olive oil. Grill for a few minutes on each side, or until tender. Top sweet potatoes with hummus and brinjal slices. Sprinkle with chilli flakes and serve.
