500G Diced String Beans
¼ Cup Veggie Broth
¼ Cup minced green Onion
3 cloves garlic, minced
1 Cup fresh Tomatoes, chopped
¼ Cup Juice from the tomatoes
Salt and Freshly ground Pepper to taste
¼ Cup chopped fresh Basil
How to make veggie Broth: Throw a bunch of vegetables (scraps, skins, etc) in a big pot with water, add salt & pepper and let it simmer for a while, then strain it. You have just made homemade Veggie Broth.
METHOD:
Saute onions and garlic in the veggie broth until onion is limp. Add tomatoes and cook for 5 – 6 minutes. Add beans, sprinkle with salt and pepper, turn heat to low, cover pan, and cook until beans are just tender. Uncover the pan and check beans doe doneness now and then. Stir in the basil at the end. Serve hot or room temperature with Fish or Meat.
